Foraged Berry Syrup

Three different berries: rose hips, watermelon berries, juniper berries. Rose hips & watermelon berry syrup are great on pancakes. Juniper syrup for use in desserts or in carbonated water as a soda.

Rose hip Jam

Ingredients (yields ~4 half-pint jars):

  • 2.5 cups fresh rose hips, stems/flowers removed

  • 3 cups water

  • 1 cups sugar (can adjust to taste)

  • 1.5 Tbsp lemon juice (helps set and brighten flavor)

Simmer only hips + water for 20 min, fine mesh strainer, return to pot with all ingredients, simmer for 20 min.

Watermelon berry syrup
(very small batch)

  • 65g watermelon berries

  • Water 1/4 cup

  • 2 tbsp sugar

  • Splash of lemon juice

Simmer whole berries in minimal water for a couple min & crush, press through fine mesh sieve, return to pot, add some water, simmer for 10 min, jar.

Juniper berry syrup:

  • 3 tbsp fresh juniper berries (rinsed, lightly crushed)

  • 4 cups water

  • 2 cup sugar

  • 3 strip lemon zest

  • 2 slices fresh ginger

Simmer for 20 min, remove and steep for 2-4 hours.
