Clam Chowder
The goal behind this recipe was to have a clam chowder recipe that is minimal in dairy, but tastes like what we’re used to on the Oregon coast (NOT pretending like coconut or almond milk are acceptable substitutes).
Standard New England clam chowder recipe with chicken broth base (not cream)
Notes:
Half yukon gold, half russet potatoes
Roux using arrowroot
Blend some potatoes into broth
Add a small amount of cream or half and half or milk after cooking.
